A great loaf pan is quietly essential - it's the difference between bread and banana bread that rises evenly and one that comes out pale on the sides and dark on the bottom. Aluminized steel is the material of choice for most serious bakers, offering excellent heat conductivity and consistent browning all the way around. Avoid very dark non-stick coatings, which absorb too much heat and can over-brown delicate batters. Straight sides and precise dimensions matter more than you'd think - a pan that's too wide means a flat loaf, and too narrow means overflow. Glazed ceramic and glass are charming but conduct heat differently and require temperature adjustments. Look for a pan with a light, natural interior and reinforced rims that won't flex when you're pulling a heavy, steaming loaf from the oven.
